Ingredients & Substitutions Notes

This recipe is easy to make, and it uses just 3 simple ingredients that you can buy at any local grocery store. I’ll include my go-to toppings, but you can top off your homemade shakes with anything you want!

Homemade Chocolate Milkshake Ingredients

  • Ice Cream – You can use any chocolate ice cream to make a pretty good homemade chocolate milkshake. That said, the key to making the best diner-style chocolate milkshake is to use premium ice cream. Serious Eats taste-tested 10 supermarket chocolate ice creams, and I think they have good recommendations for the best premium chocolate ice cream brands.
  • Whole Milk – For a thick and creamy milkshake, I recommend using whole milk. 2% milk or even skim milk will make an okay milkshake, but it won’t be quite as creamy. Alternatively, you can also use 3/4 cup of chocolate milk instead of the whole milk and chocolate syrup.
  • Chocolate Syrup – I like to add a little bit of chocolate syrup to the milkshake for a stronger chocolate flavor. It makes a good topping too.

Optional Milkshake Toppings

  • Whipped Cream – I always top my homemade milkshakes with whipped cream. If you have time, you can make homemade whipped cream to give your milkshake game a big upgrade.
  • Maraschino Cherries – When I think classic diner-style milkshakes, I picture a fat maraschino cherry on top. You can buy them for cheap at almost any grocery store, and a cherry or two on top will really make your milkshake pop.

How to Make a Chocolate Milkshake

Making a homemade chocolate milkshake at home is so easy with just a few ingredients. A couple hours before you’re ready to make your milkshakes, place your milkshake glasses into the freezer so that they can chill ahead of time. This will help to keep your chocolate milkshakes from melting before you can serve them.

How to Make Diner-Style Homemade Chocolate Milkshakes

  1. In a blender, add the chocolate ice cream, milk, and chocolate syrup.
  2. Blend everything together on low speed ’til smooth, about 1-2 minutes.
  3. Pour the blended milkshake into the pre-chilled glasses (or jars), and add a straw to each.

This isn’t a recipe that you can make ahead, so serve your homemade chocolate milkshake right away before it melts! Freezing the milkshake glasses ahead of time helps to keep it cold. I like to top mine with whipped cream and a cherry, but you can also drizzle on more chocolate syrup or even caramel sauce for a tasty twist.

How to Make a Thick and Creamy Milkshake

Making a perfectly thick and creamy milkshake isn’t hard, but it’s something a lot of people struggle with. Nobody likes a thin milkshake that melts before you can even sit down to enjoy it! I’ve learned a few tricks over the years, and I’ll share a few tips below so that you can avoid this problem.

  • First of all, always pre-chill your milkshake glass. I like to put mine in the freezer hours before I even make my milkshakes so that they’re extra cold.
  • Second, use cold ingredients. The ice cream should be used straight out of the freezer, and be sure to keep all of your other ingredients in the refrigerator so they’re extra cold. If you haven’t noticed the common theme yet, everything needs to be thoroughly chilled!
  • The key to making an extra-thick milkshake is to use a high ratio of ice cream to milk. If you want an even thicker milkshake, you can always add more ice cream. For a thinner milkshake, add more milk. My recipe calls for more ice cream to begin with than most other recipes, because I prefer a thicker milkshake that doesn’t melt so fast.

Expert Tips and Recipe FAQ’s

What’s the difference between a milkshake and a malt?

The main difference between a milkshake and a malt is that a malt uses malt powder, while a milkshake does not. Malt powder adds a mildly nutty flavor, and a slightly thicker texture. If you’d like to make a malt, here’s a great recipe I found showing how to make a chocolate malt.

Why is my homemade milkshake too thin?

This can be caused by using too much milk, or it’s possible that you over-blended the milkshake. If your milkshake glass was not cold enough, it may have simply started to melt. On the other hand, using a low-fat milk will also naturally result in a thinner, less creamy milkshake.

Can I make this homemade chocolate milkshake without a blender?

Yes, you can make homemade chocolate milkshakes without a blender. In fact, I have a recipe on how to make a milkshake without a blender. You can use the same method for this recipe.

Can I make a chocolate milkshake with cocoa powder?

Yes, you can make a chocolate milkshake with cocoa powder. Use 2-3 tablespoons of cocoa powder plus 2-3 tablespoons of sugar to make a substitute for the chocolate syrup. Additionally you might add an extra 1/4 cup of milk to make up for the dry ingredients. To avoid a gritty texture, you’ll want to whisk the cocoa powder and sugar into the milk before adding everything to the blender, so that everything gets fully dissolved.

Can you freeze leftover milkshake?

No, I don’t recommend freezing leftover milkshake. Once it’s started to melt, the texture will become hard and icy, not at all like the classic diner-style milkshake we all know and love. Thankfully, it’s so quick and easy to make that I don’t really see any point in making it ahead of time anyways.

More Milkshake Toppings & Flavor Variations

Here are some more of my favorite milkshake toppings, as well as a few other flavor variations that you can make with this recipe. You can use these toppings and flavor variations to build your own milkshake bar.

Toppings

  • I don’t think you can add too much chocolate, which is why chocolate shavings make such a great garnish!
  • Add crushed Oreo cookies on top, and you can even mix some in to the milkshake to make an Oreo chocolate milkshake.
  • If you’re looking for milkshake bar ideas, sprinkles are a must-have topping ingredient, especially if there are any kids around!
  • In addition to the chocolate syrup, try drizzling caramel syrup on top. Yum!
  • Crushed peanut butter cups make a great topping that peanut butter lovers will appreciate. Add some peanut butter sauce and make it a chocolate peanut butter milkshake.
  • Mash up some bananas and make it a chocolate banana shake!
