Easy Frankenstein Rice Krispie Treats for Halloween

Halloween is just around the corner, and there's nothing quite as easy or festive as these super cute Halloween Rice Krispie treats.

Now I'm not sure Frankenstein was meant to be a sweet character, but he's pretty sweet in Rice Krispie form.

We'll use my favorite Rice Krispie treats recipe for our base, but I'll show you how to easily make them into green Rice Krispie treats.

All you need to decorate these soft and chewy Frankenstein marshmallow treats are a little bit of decorating icing and some candy eyeballs. And when I say decorating icing, I mean that tube at the store that's ready to go, no mixing involved.

I love cute Frankenstein treats so much, that last year I even made Frankenstein brownies.

Dutch Oven or Sauce Pot

Heat-Resistant Spatula – This one is my go to spatula.

HOW TO MAKE FRANKENSTEIN RICE KRISPIE TREATS

You can use any crisp rice cereal for this Rice Krispie treat recipe, whether you choose to use the original Rice Krispies cereal, a generic brand, or a store brand. As I mentioned above, I prefer Aldi's brand because it's gluten-free.

Quick Tip: Make sure you use salted butter over margarine. Butter will give your Halloween cereal treats a richer flavor and texture.

Before you get started, prepare your baking dish by spraying it well with cooking spray.

HOW TO MAKE GREEN RICE KRISPIE TREATS…

  1. Melt the butter in a large sauce pot or Dutch oven on the stovetop.
  2. Then add in the vanilla extract, salt, and mini marshmallows.
  3. Continue stirring until the marshmallows have fully melted, and then add green food coloring until you have the shade of green you want (I usually add 8-12 drops).
  4. Remove the mixture from the heat, and quickly stir in the Rice Krispies.

  1. Then you just spread the Rice Krispie treats into a greased baking dish and let them cool.

If you want a microwave version, try adding green food coloring to these microwave marshmallow treats.

DECORATE GREEN RICE KRISPIE TREATS INTO FRANKENSTEIN TREATS

First you'll need to cut your entire pan of treats into squares or at least, as close to square shaped treats as you can.

Then decorate your Rice Krispie Frankensteins in 3 simple steps…

  1. Using the tip that comes with or goes on your decorating icing, add hair to your Frankenstein with the black icing. Just do a zig-zag along the hairline, and outline around the top of the head. Then fill in with black icing.
  2. Also, add a small smile or mouth, as well as a piece of stitching to one cheek.

  1. Finally, add candy eyes, setting them in place with a tiny bit of icing on the back.

Don’t worry about perfection because the more imperfect he looks, the more he’ll look like the monster mash-up his character was really created to be. Just have fun with it!

Note: You can use homemade sugar cookie icing in place of the decorating icing. Just keep in mind you'll also need black food coloring.

HOW TO MAKE MORE COLORFUL RICE KRISPIE TREATS

Pink Rice Krispie treats are perfect for Valentine's Day, baby showers, and more! You can make strawberry flavored Rice Krispie treats with a pink color too.

Make chocolate Krispie treats for a chocolaty shade of brown in your treats. Better yet, marry chocolate and peanut butter together to make these yummy no bake chocolate peanut butter Rice Krispie treats!

HOW TO KEEP RICE KRISPIE TREATS SOFT

Soft Rice Krispie treats are one of those desserts that after 2 or 3 days will start to harden up and be either extra chewy or hard as a rock.

Two ways to ensure that you have the softest treats possible is by using fresh ingredients, namely marshmallows and cereal, and by cooking the marshmallow mixture on low to medium heat.

Also, use lots of marshmallows. If you're using 6 cups of cereal (as in the case with this recipe), you'll want the same amount of marshmallows, so a 1:1 ratio.

And finally, another way to keep them soft is to store them properly. It's important to store your treats in an airtight container or sealed plastic bag. You'll probably want to eat them within the first 2 or 3 days.

CAN YOU FREEZE RICE KRISPIE TREATS?

You can if you need to. And then get them out with at least half an hour to thaw before serving.

Be sure when freezing them, though, that you again store them in an airtight container or freezer bag. And you might even put wax paper or parchment paper between the layers of treats so they don't stick together.

Also, I recommend not decorating them until you get them back out of the freezer and are ready to serve them.

Notes

*If you decide to make your own icing or use decorating icing instead of cookie icing, you can use Wilton Tip #5 to pipe the hair, mouth, and stitches onto your Frankenstein.
Can You Freeze Rice Krispie Treats?
You can if you need to, but I'd wait to decorate them after you thaw them. Be sure to allow at least half an hour to thaw before decorating and/or serving.
